Ingredients- 4 cups cooked (2 cups uncooked) cooled rice
- 2 medium-sized diced bell peppers (red and yellow)

- 1/2 cup corn
- 1/2 small diced red onion
- 1/2 lemon juice
- 6 tablespoons olive oil
- 1 tablespoon parsley
- 1 tablespoon spring onions
- Salt to taste
Combine rice, bell peppers, tomatoes, celery, corn, and onion in a bowl. Mix with lemon juice, olive oil, parsley, spring onions, and salt. Serve right away or store covered in a cool place.
