Healthy Rice and Vegetable Salad is a dinner salad based on rice, bell peppers, tomatoes, celery, corn, and onion. The salad is colorful, healthy, and easy to make. Serve as a main dish. Serves 8

Ingredients

  • 4 cups cooked (2 cups uncooked) cooled rice
  • 2 medium-sized diced bell peppers (red and yellow)
  • 2 large diced tomatoes
  • 1/2 cup diced celery
  • 1/2 cup corn
  • 1/2 small diced red onion
  • 1/2 lemon juice
  • 6 tablespoons olive oil
  • 1 tablespoon parsley
  • 1 tablespoon spring onions
  • Salt to taste

Directions

Combine rice, bell peppers, tomatoes, celery, corn, and onion in a bowl. Mix with lemon juice, olive oil, parsley, spring onions, and salt. Serve right away or store covered in a cool place.
