Healthy Vegetable Fruit Salad with Tangy Cheese features a combination of pears and salad greens mixed with blue cheese and walnuts. Dressed with mustard flavor lemon juice vinaigrette, the salad has rich and diverse taste. Serves 4

Ingredients

  • 2 cups salad greens
  • 3 medium-sized sliced pears
  • 1 cup cubed blue cheese
  • 1 cup chopped walnuts
  • 2 tablespoons lemon juice
  • 6 tablespoons olive oil
  • 1 clove finely chopped garlic
  • 1 tablespoon mustard
  • 1 teaspoon chopped thyme
  • Salt and pepper to taste

Directions

Make salad dressing by combining and stirring lemon juice, olive oil, garlic, mustard, thyme, pepper, and salt. Dress salad greens with 3/4 of the dressing. Separate greens into four plates. Add pears, cheese, and walnuts to each plate in equal proportions. Sprinkle with the rest 1/4 of the dressing and serve.
