Wild Mushroom Salad with Greens

Wild Mushroom Salad with Greens is tasty and easy to make. Served as a main meal, the mushroom salad is a perfect healthy dinner. Serves 6

Ingredients

  • 2 cups fried/baked wild mushroom mix
  • 4 cups salad greens
  • 1 medium-sized chopped shallot
  • 4 tablespoons chopped chives
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 tablespoons balsamic vinegar
  • 4 1/2 tablespoons olive oil
  • 1/2 teaspoon finely chopped or dried thyme
  • Salt and pepper to taste

Directions

Prepare dressing by whisking together balsamic vinegar, oil, thyme, salt, and pepper. Combine in a bowl salad greens, chives, and mushrooms with shallot cooked together. Toss with the prepared dressing. Separate into plates, top with Parmesan, and serve.
